1 tin of black eyed beans
half a tin of green lentils
half a red onion
grated carrot
finely diced pepper
finely diced cucumber
for the dressing
salt
pepper
clilli flakes
white wine vinegar
lemon juice
olivie oil
Any tinned bean or lentil can be used and I also did this a few days before with a tin of mixed beans etc
I just kinda bunged em all in a dish and added the dressing bits to taste. I like things very sour and added lots of vinegar to make it very tart.
Its a great post of meal, or accompaniment to a meal and is very filling and full of protein. With the left overs I added them to the chilli I was making for tea the night after for an added protein boost and to make the chilli go another meal.
