This is a dish that I have adapted from a high protein recipe book.
It is lovely and high in protein. There is approx 50 gr of protein per serving (depending on how many nuts you add)
serves 2
8 oz cooked chicken breast chopped into bite sized pieces,
1 sweet apple chopped
1 - 2 sticks of celery chopped
2 tablespoons (about 1 - 2 oz) of chopped dry roasted peanuts (I use salted as I love the taste)
small pot of plain yoghurt (I use Fage 0% fat 170g pot as it is high in protein)
1 tablespoon of mayo mixed with 1/2 teaspoon of curry powder
pinch of cayenne
toss together the chicken, apple, celery and peanuts in a large bowl. In a small bowl mix yoghurt, mayo, curry powder and cayenne. Toss this into the chicken mixture, serve on lettuce leaves.
The actual recipe states 1/4 cup plain yoghurt,but I use a bit more yoghurt than recommended as I like a 'wetter' mix, but you can adjust to suit your own taste.
