I was just wondering,

Sometimes I find the taste of jelly made according to the package instructions too strong a flavour and I dont enjoy it and end up throwing it away after a few mouthfuls.

Answer me this....

If I made the jelly with more water than it tells me to, to make it a weaker flavour, will it still set properly?

I don't think it will set if you use more water
My mom used to make low cal jelly by using gelatine (you can get non-flavoured gelatine from the supermarket) and diet pop or sugar free squash

And for the milk tip, ive tried doing it with a yogurt and that was lovely!

Im gonna get some gelatin and make a fresh orange one!
 
I made one earlier using half/half water and light evaporated milk. Whisked it up with electric beaters until it doubled in volume and leave to set in fridge. Makes the most delish dessert with a frothy mousse on top and smooth milky jelly below :D
