Slim for 2009
For when you fancy a little treat!!
200g blueberries (have also used banana, strawberry, raspberry or a combination)
25g allbran
2 tabs artificial sweetener (I leave this out as don't like the taste)
60ml orange juice (have used cranberry juice too)
60g SR flour
2tspn baking powder
1 tspn cinnamon (or whatever spice you like)
2 eggs lightly beaten
Preheat oven to 200c/Gas 6
Place fruit, allbran, juice in a bowl and mix. Add flour, baking powder and spice and mix well. Add eggs and mix.
Line six muffin tins (no need for cases if you use non stick muffin tin) and divide mixture between them. Bake for 15 - 20 mins until risen and firm.
They keep well in an airtight container.
Obviously not the same as a Starbucks muffin but great for a planned healthy treat/dessert.
