I love cooking, and creating meals that are not just ok for me, but suitable for the whole family. I wanted somewhere to record some of the recipes that work!
Low Fat White Sauce
275ml Cold Milk (pref skimmed)
20g Plain Flour
Seasoning
Mix all the ingredients in a pan with a whisk, then heat gently stirring constantly until it thickens. Allow to cook for 5 minutes over a low heat.
Low Fat Cheese Sauce
Make as above, but add a small amount of low fat strong cheese and a tspoon of wholegrain mustard.
Bolognaise
Fry Light
500g Extra Lean Minced Beef
2 x 400g tin chopped tomatoes
1 x beef stock cube
Splash Worcestershire Sauce
1 x onion, chopped
2 cloves garlic, finely chopped
Splash of red wine
Spray a large pan base with frylight and fry off the mince and the onion until browned. Add the garlic. Sprinkle a stock cube over and add a splash of red wine. Add a splash of worcestershire sauce and the tinned tomatoes. Season, and allow to simmer for 20-30 minutes. Alternatively, throw everything in a slow cooker for 6-8 hours!
Low Fat Lasagne
Make the bolognaise sauce and low fat white sauce as above. Layer up with an emphasis on the meat being thick and the sauce being light, with only 2 layers of dried lasagne sheets. Top with a thin layer of white sauce and a grating of parmesan, and bake for 40-45 minutes.
Low Fat Thai Green Curry
2 chicken breasts, no skin
1/2 onion, chopped
1 pepper, deseeded and chopped
Handful of mushrooms, chopped
Fry Light
Green Thai Curry Paste
400g Tin Low Fat Coconut Milk
Fry the chicken and veggies in the fry light in a large pan. Add in a good dollop of curry paste (tbsp) and cook out for 5 minutes. Add the coconut milk and simmer for 15minutes. Serve with rice/noodles or on its own as a kind of soup!
Add any veggies you like, pak choi, baby sweetcorn etc.
Saints Tomato Pasta Sauce
5 large tomatoes, chopped
1/2 onion chopped
Small courgette, chopped
Red Pepper, chopped
Handful of mushrooms, chopped
Handful of spinach, chopped
Handful of basil, chopped
Put all the ingredients in a large pan, with a splash of hot water. Bring to the boil, and simmer until all the veggies are soft. Season, and blitz with a hand blender until nearly smooth. Add to hot pasta and enjoy!
For a creamier sauce, stir in a dollop of very low fat cream cheese before blending.
This can be done with any leftover veggies, so long as you have the tomatoes as the base. You can leave it chunky if you prefer
