sausage casserole

ive never had sausage casserole since before banding and i really fancy a little of it.

has anyone got a nice low fat recipe for sausage casserole please ? as ive never made a home made one before.:confused:

Low fat sausage casserole

278 calories per serving.

8 low fat sausages
1 medium red pepper
1 medium onion
200g mushrooms
2 beef stockcubes
1 can chopped tomatoes
2 tsp mustard powder
35g white flour
3tsp olive oil
50g tomato puree


Grill the sausages on a medium heat. Once cooked cut each one into 3.

Slice the onion and saute in olive oil, when soft add sliced pepper and mushrooms and cut until they are soft aswell.Stir in tomato puree and you can add mixed herbs aswell.

Stir in flour.

Mix oxo cubes and mustard powder with 250ml of hot water and add slowly to the pan.

Add tinned tomatoes and sausages and simmer on a low heat for 30 mins

I do mine with a tin of healthy baked beans, a tin of chopped tomatoes and a splash of worcs sauce. Brown the sausages lightly then whack it all in a slow cooker. Keeps it all soft and healthy.

I shall try this too as it sounds deeelish, apart from the peppers as I don't like them either. They are the devils vegetable!!

:yuk: i agree and most things in the shops has peppers in and they are so nasty & spoil a good meal they do:9529:
 
tina why not freeze it in portion size tubs thats suitable for you, then it would be handy to defrost and heat when you fancy it, i do that with chilli and spag bol.

i have a section in my freezer of "ME" tubs which will soon have a few joining them with sausage casserole in them lol :D
