Maybe a similar recipe exists but this was a bit more tasty than tinned tomato soup. Depending where you are at with your eating, you can leave it a bit chunky or completely blend.
1 Large/ 2 medium sweet potatoes peels and cubed.
2 vege oxo dissolved in 1.5 litres water
1 tablespoon cumin
1 tablespoon Ground coriander
1 tablespoon Tumeric
1 Large onion
1/2 teaspoon of chili powder (or as much as you can handle!)
Fry light (sunflower oil)
Salt and Pepper to season
1. Add onions and all spices to saucepan and cook for 10 minutes, softening the onions and cooking the spices.
2. Add your stock and sweet potato.
3. Simmer for 20 minutes till sweet potato soft.
4. You can season now or after it's all whizzed up, or leave it to taste when serving
