Played around with dinner tonight, and came up with this -
I got the fish from tesco fish counter, cos you can just get a little bit at a time. it's sold as fish pie mix, and is salmon, smoked haddock, and cod.
Mixed cubed fish
Enough milk to nearly cover
Tarragon
Flour
Pop the fish in a saucepan, nearly cover with milk, and add tarragon (tsp dry or tbsp fresh), and a tsp of plain flour.
Bring to the boil, stirring, until the sauce has thickened and the fish is cooked. Takes about 5 minutes.
Variations - use a splash of white wine in the milk, or swap the tarragon for some low fat cheese.
I had mine on it's own as a super quick meal, but would be lovely with some brocolli.
Also, if cooking for a family just up the quantities and serve with mashed potato as well.
