My own recipe
Ingredients
1 can coconut milk
2 chicken breasts slicesd/diced
1 small onion
2 small carrots grated finely
1 finely chopped clove garlic
1/2 teaspoon corriander powder
1 teaspoon ground ginger
1/2 teaspoon Cayenne chilli Pepper - less if you do not want to hot a dish
Method
1. Use spray oil in pan and add onions and lightly fry until soft
2. Add chicken to seal, and garlic
3. Add coconut milk and bring to boil
4. Add all other ingredients
5. Leave to simmer and reduce for 30 mins, stiring ocassionally
6. Using slotted spoon, remove chicken from pan and allow to cool a couple of minutes, leave liquid to cool slightly
7. Using the back of a fork, press it againt the edge ot a piece of chicken and pull back to mash the chicken up - do this across the grain of the chicken
8. Pour Liquids into a blender and then drop in the smashed up chicken breasts
9. Blend until smooth
10. Freeze in ice cube trays and use as required
