Slim for 2009
This is a recipe I used when doing WW and is yummy. It purees really well too. Lots of healthy veg and protein.
serves 4 195 cals per serving
100g dried red lentils
1/2 kettle boiling water
sm onion finely chopped
1 courgette cut into chunks
150g baby button mushrooms
1 carrot peeled and grated
2 tspn black mustard seeds
175g frozen spinach
2 tabs medium curry powder (or hot/mild if preferred)
30g creamed coconut
75g paneer cheese (Indian cheese - most supermarkets now stock)
Put lentils in large bowl and cover with boiling water. Microwave on high for 5 mins. Drain and rinse with cold water. Heat a non stick pan and spray with low fat spray. Cook onion, mushroom and courgette for 5 mins till soft.
Add carrot, mustard seeds, spinach, cooked lentils, curry powder and 5 tabs cool water. Cook for 5-7 mins over low heat, stirring occasionally.
Stir in creamed coconut and cubed paneer cheese and cook for further 5 mins until heated through.
Also freezes well!
