victoria jam sponge cake and home made pastry

well i start my new job on monday so im of to brush up on my cookery skills!! any tips for the two above?......
 
I find Delia Smiths all in one victoria sponge recipe always comes out well. I use 6ozs of everything and 3 eggs. My youngest won the silver cake slice at aged 4/5 and my eldest came third, using this recipe. It caused uproar as the competition was for adults. They weren't disqualified as we had paid the entrance fee and no one knew until they had won. Quick change of prizes from bottle of wine to box of chocolates ensued.

When you are making your victoria sponge, whisk the egg whites up seperately and then fold them into the mix at the end before putting them in the cake tins, this makes mine very fluffy and mine are never flat cakes, they are always nice and fluffy and light. My victoria sponges always are very popular.

hey stephi, could you work out how to do a sort of bypasser friendly cake, with splenda instead of sugar, etc, im just thinking of maybe so that say at christmas if we fancy summat nice, we dont feel left out.
 
Make sure you rub flour on the rolling pin and dust the worksurface with flour to prevent the pastry from sticking... xxx
 
Asda do a cracking sponge, not tried their pastry's....

I was actually given the recipe for a bypass friendly fruit cake, I will ask the originator if I can email it to you xx
