Hate the things but I tryed a piece (before op) of the cake and it was yum

Do you think its a healthy one or not

Weetabix Cake
(Serves 12)


Ingredients
2 Weetabix
113g (4oz) sultanas
142ml (5floz) skimmed milk
142ml (5floz) water
113g (4oz) self-raising four
1 teaspoon mixed spice
14g (0.5oz) artificial sweetener
1 egg beaten

Method;[/i]
1. Preheat the oven to 180oC, 350oF or Gas Mark 4

2. Put the Weetabix and sultanas in a bowl. Pour the milk and water over the top and leave to soak up all the liquid.

3. Stir in the flour, mixed spice, sweetener and beaten egg.

4. Spoon the mixture into a 454g (1lb) lined loaf tin and bake in the preheated oven for 1 1/4 hours until cooked.

5. Cool on a wire rack before serving, then cut into 12 slices.

I used to make a similar cake when I was at Slimming World - except that instead of flour we used Scan Bran crispbread. Very nice. My OH used to have it with butter on! Marion xx
 
I went my mates today and she made a cake with scan bran and added a bit of drinking choc to the mix and it was well yum and cooked in the micro wave
 
i make one but i put coconut and lemmon juice in it i also put either melted choc or icing sugar mixed with lemmon juice on top very morise but not very slimming
 
Hey Teen - I used to make the slimming world one, and as Marion said, scan bran instead of flour, and I think more eggs too. I couldn't stand it personally but hubby liked it slathered in butter... ;) However, can't see anything unhealthy in it for an RNY-er, so enjoy!!!
