Hi Emma Louise - I eat nuts, brazils, cashews and almonds. Unsalted and in moderation. Cashews are nice thrown into a stir fry for a bit of extra crunch. I am same time scale as you and do struggle a bit with celery it is a bit too stringy and high fibre I think. I am ok with the really nice middle stuff but not the outside bits!!
As far as fruit goes I like tinned mandarin oranges, tinned mixed citrus fruits (orange, grapefruit etc), tinned peaches - all in JUICE not syrup!
I like seeds on my salad leaves, I make a rocket and avocado and chicken salad and sprinkle it with pine nuts and mixed seeds that I buy ready mixed from the co op!
