When I first went onto the soft/pureed stage I was using around 700-800 cals a day, then when I moved onto normal food I was aiming for around 1100 a day a losing quite well on this around 3lbs a week. I went away to barcelona at the weekend, eat everything but in small quantities, the only thing which got stuck was egg, so going to put this on my not to eat list, I even managed paella, was lush, loads of wine, got on the scales this morning and put on 3lbs, oops, back onto 1000 cals a day now.
