Tuna Salad

Delicious! Makes about 4 meals

1 tin of tuna (in springwater)
1 tomato
1/2 an avocado
a few slices of spring onion or red onion
a tablespoon of extra light Hellmann's mayo
a tablespoon of parsley
a tablespoon of basil
salt and pepper to taste

chop up everything and mix together. Suitable for soft food level as it can all be broken up with a fork.
;)Consider adding hard boiled egg for additional protein.

I also like adding a spoonful of fat-free fromage frais for consistency. But I would do this just before eating, rather than mix it in with everything.
