Everyone likes fish.
Monkfish and parma ham is my signature dish.
YTou take a whole monkfish fillet - butterfly it.
Then put it to one side.
You take some parsley, some dill and the rind of a lemon and you make a paste by adding some olive oil.
Spread that inbetween the monkfish fillet so its like a sandwich.
Wrap the fillet with the stuffing in parma ham.
Put it in a hot pan for 30 seconds each side to seal it.
Then lay it on foil and seal all around the edges on the foil, leaving a gap at the top to pour in 200 mls of white wine.
Seal the foil and put in the oven for 30-40 minutes.
It steams/poaches/bakes.
Let it rest for 10 minutes.
Slice it like a joint of meat and serve with asparagus and new potatoes.

Second day of mush post-fill. Had a visit from an ex this morning who made very free with the compliments (he's not seen me since a fortnight post-op), so a happy morning.
Now vegging out watching crappy telly, will go for a swim later on. Out tonight for a mate's birthday, just in the mood to go dancing too
